Fast & fresh this mexican chicken burger prides itself on being the leanest of the bunch. With chicken that isn’t fancy but certainly tasty, little to no fat and a salsa to titilate your taste buds.
The chicken breast is delicately cut in half lengthways and pounded to 1cm thickness, for ease of eating of course!
The chicken is then tossed in the garlic, oregano and mexican seasoning – mmm yum! It is then cooked over high heat in a non-stick fry pan (no grease needed!) until extemely crispy.
To make the salsa, the corn kernels, red capsicum and lemon juice are thrown together in a splash ready to be served atop the wholemeal bun with a dash of mayo and rocket. Now that’s how you do a burger healthy style..
