A veggie burger is a burger patty that does not contain meat. These burgers may be made from ingredients like beans, especially soybeans and tofu, nuts, grains, seeds or fungi such as mushrooms or mycoprotein.

The patties that are the essence of a veggie burger have existed in various Eurasian cuisines for millennia, including in the form of disc-shaped grilled or fried meatballs or as koftas, a commonplace item in Indian cuisine. These may contain meats or be made of entirely vegetarian ingredients such as legumes or other plant-derived proteins.

There have been numerous claims of invention of the veggie burger. The dish, by name, may have been created in London in 1982 by Gregory Sams, who called it the ‘VegeBurger’. Sams and his brother Craig had run a natural food restaurant in Paddington since the 1960s; a Carrefour hypermarket in Southampton sold 2000 packets in three weeks after its launch. An earlier reference can be heard in the 7 June 1948 episode of the American radio drama series Let George Do It called “The Mister Mirch Case” where a character refers to “vegeburgers,” as a burger made of nuts and legumes.

Using the name Gardenburger, an early veggie burger was developed by Paul Wenner around 1980 or 1981 in Wenner’s vegetarian restaurant, The Gardenhouse, in Gresham, Oregon.

You can prepare at Home

Here you can check our recipe and the ingredients for catch your on Koala burger at home:

Ingredients:

1 cup frozen sweetcorn

1 cup frozen peas

1 cup cannellini beans, canned

1 small onion, finely diced

½ bunch of fresh coriander

1 bunch fresh parsley

75 g whole wheat or gluten-free flour

½ tsp ground cumin

½ tsp cayenne pepper

½ tsp sea salt

Freshly ground black pepper

1 tbsp sesame seeds

1 tbsp sunflower seeds

Coconut oil for frying

1 handful fresh arugula (rocket)

3-4 dill springs

1 handful baby spinach leaves, fresh

2 pickled cucumbers, sliced

½ lime, juice only

4 large good quality whole wheat or gluten-free buns

Instructions:

Defrost the frozen vegetables for around 15 minutes & then preheat the oven to 190°C/375°F.

Add the:

Vegetables
Cannellini beans
Onions
Coriander
Parsley
Flour
Cumin
Cayenne, salt & pepper

Into the blender and pulse until you have a rough paste. To this paste, add the sesame and sunflower seeds, and then pulse again to make sure they’re evenly spread.

Shape the mixture into four burgers using your palms, cover with a plastic foil and freeze them for 10 minutes, then transfer into the refrigerator. (the last steps are important for keeping them firm).

Add the spring onions, garlic clove, chickpeas, sun-dried tomatoes, Dijon and lemon juice into the blender, and process to combine, then gradually add the olive oil until you obtain the mayonnaise consistence.

Spray a cast-iron skillet with coconut oil, add the burgers and cook over low heat for 5 minutes on each side, until golden.

In a medium bowl add the arugula, spinach and dill, drizzle with extra olive oil and lime juice, and mix to combine.

Cut a burger bun into halves and toast them for a few minutes on a hot griddle pan or under the grill

Spread some mayonnaise on a burger bun base, add a vegan burger, top with another bit of mayonnaise, then layer 3-4 beet and sweet potato chips, 1 slice of pickled cucumber and fresh greens salad, close with the bun top, then continue the same with the other burgers.

Serve warm or pack to go.

Flavor and Smell

Beef burgers have a distinctive flavor and smell. You’d definitely know when someone is cooking a beef burger in your house just by its smell.

Veggie burgers’ flavor and smell differ depending on the ingredients. Each kind has a distinctive flavor because they’re made out of an assortment of ingredients. Also, they don’t have a specific smell.

Nutrients

The protein that comes from beef is pretty high. Red meat, in general, is a superior source of iron and vitamins.

Veggie burgers are made of almost equal percentages of fats, proteins, and carbohydrates. It’s low in fiber and it’s a good source of vitamin B12, phosphorus, and dietary fiber. One of the bad aspects of veggie burgers is that they tend to be high in sodium.

The Texture of Veggie Burgers

Just like the flavor, the texture depends heavily on the ingredients. The chewiest veggie burgers are typically created to resemble beef. They are thick, with a diminishing consistency at times and juicy sponginess at other times.

Both veggie burgers made of beans, rice, and vegetables are lighter and mushier. Often, they can be crunchy, that’s mostly when minced carrots and beetroot are used.

Some of the texture can be observed when cooking the burgers. Beef, when cooked, at about 131°F to 140°F becomes medium-rare. Meaning, the beef is cooked and can be eaten. It becomes moist, juicy, and soft.
