The recipe

So, this is what you’ll need:

• 300g grass fed beef mince
• 50g gluten free breadcrumbs
• 1 egg, whisked
• 2 zucchini slices, grilled
• 4 slices vintage cheddar cheese
• 1/2 onion, chopped in rings
• 1 ripe tomato slices, grilled
• 4 leaves of fresh lettuce
• Home made free range eggs mayo (recipe here)
• 2 gluten free bread rolls
• Salt & pepper
• Olive oil
• Garlic powder

Firstly, combine the mince with the egg, breadcrumbs, some garlic powder, salt and pepper. Divide it in half to form 2 patties and place them in a pre-heated fry pan with little olive oil. Cook them 2-3 minute for each side or until golden brown and then transfer them on a plate.

Secondly, cut the bread rolls in half and toast them for 2 minutes in the same fry pan. After that, cut the onion rings and cook them in the fry pan with some olive oil until soft. Start topping each roll base with the lettuce, zucchini slice and beef patty. Then add the cheddar cheese and the grilled tomato. Finally, add the onions, the mayo and season to taste.
